   Sweet coffee berries come from the unique geographic environment; Kopi Luwak comes from scientific and user-friendly civet-raised way and the strictly control, so precious but hardly to gain.
  Apollo Farm, where Sunvirtue comes into being, is our own coffee production site. Located in scenic Dalat, Vietnam at an altitude of 1,000 meters, Apollo Farm has infrequent landform of the smooth plateau with more than 20 hectares of the coffee farm. Although the temperature difference between day and night is over 10℃, the weather at Apollo Farm is like spring all the year round with clear dry season and wet season. The nearby lakes cause the microclimate and enrich the laterite soil to be more fertile, Apollo Farm grows all high quality Arabica coffee trees, which is differ from the local Vietnamese growers who are used to planting Robusta coffee trees.
  By manually harvesting, we choose the ripened coffee berries to test via brix meter then feed the civets the best. However, civets are the naturally selectors by using their sense of smell and taste, they will pick again from the berries we supply, eat only with the best flavor. Later, the coffee berries will come out through the civets’ digestive tract and the anal scent glands; then, processed each step strictly; at the last part, our coffee beans will be roasted via the Taiwanese professional roaster, who has more than 20-year experiences on practical roasting and even owns SCAA Roaster Guild Certification.
  Apollo Farm is certified by UTZ and is now applying for Rainforest Alliance approval. Also, to raise the civets, we get the Certificate of Normal Forestal Animal Farm for Commercial Purpose by Vietnamese government. Within the raising area, Apollo builds six-star cages for the civets with beautiful and natural plants surrounded. The civets are treated and raised in humanity way, this is quite different from other Vietnamese or Indonesian raisers who take the civets as production tools only.
   At Apollo Farm, there are 7 areas to raise the civets and each of them can live in a 6.6 square meter with 3-meter high space. Between the raising areas, we set the vast green fields as safety culture zones. Also, we set the water separator at raising area to separate the rain water and dirty water to assure the sanitation is clean.
For the civets’ good, we do take a lot of care on their health: we have the veterinarians and the full-time staffs to look after them every day and follow the nutritionist’s instruction to prepare their daily-need nutrient; moreover, every civets’ bowls are washed and cleaned detailed to make them enjoy the way they live and be treated at Apollo Farm.
The most important thing, at Apollo Farm, the ripened coffee berries are just the Civets’ fruit, we will never treat them like the production tools to feed only coffee berries and more coffee berries. This is also the reason why Sunvirtue Kopi Luwak is that cherished, when Apollo’s civets can only produce shelled coffee beans about 200g/pc/day (which is about 120g green beans), we make it with minimum quantity but maximum quality.
In order to avoid any of Apollo Coffee contaminate by the dirt, we have our dry mills with higher shelving to process the coffee in the greenhouse to keep the coffee quality stable and professional. In the greenhouse, first, there is no need to worry about the sudden downpour; besides, the indoor circumstance with temperature controlled system can improve the quality and the dried situation of the coffee beans; moreover, the goods ventilation in the greenhouse can increase the bean-dried efficiency, the moisture and the dew will no longer cause the affection; at last, the higher shelving provide the better convection to make the coffee beans can be dried even, and also its solid structure can stand the workers to step on it to stir the coffee every 2 hours from day to night. All efforts are for producing the most tasty and high quality Kopi Luwak.
